Thanksgiving in the desert is its own kind of holiday. It’s 75 degrees, the patio is the dining room, and half your guests flew in from somewhere cold. You want the classics, but you don’t want to spend the whole day basting a turkey while everyone else is by the pool.
Here are four Thanksgiving menus I cook for families and friend groups across the Coachella Valley, and how a private chef Thanksgiving actually works. Thanksgiving 2026 is Thursday, November 26.

1. The classic, done right
Most families want the Thanksgiving they grew up with. The job is to make every dish taste the way they remember it, only better.
- To start: roasted butternut squash soup with brown butter and sage
- Salad: autumn greens, roasted pears, candied pecans, blue cheese and a cider vinaigrette
- The turkey: dry-brined, herb-roasted turkey with pan gravy
- Sides: cornbread and sausage stuffing, garlic mashed potatoes, green beans with crispy shallots, cranberry-orange relish
- Dessert: pumpkin pie with whipped cream
A dry brine is the one step that changes everything: salt the turkey two days ahead and leave it uncovered in the fridge. The skin crisps and the meat stays juicy, with no bucket of brine to wrestle.
2. A Modern California table with Vietnamese roots
This is the menu I cook for my own family. It keeps the turkey and the feeling of the day, with flavors from my Vietnamese heritage.
- To start: fresh rice paper rolls with herbs and a peanut-hoisin dip
- The turkey: lemongrass and garlic roasted turkey with a fish-sauce caramel glaze
- Sides: sticky rice stuffing with Chinese sausage and shiitake, caramelized Brussels sprouts with fish-sauce vinaigrette, coconut-whipped sweet potatoes
- Dessert: pandan or bananas foster bread pudding
See more of this style on my Vietnamese private chef and Modern California menu pages.
3. Fully plant-based, with nothing missing
Vegan guests deserve more than a plate of sides. A plant-based Thanksgiving should have a real centerpiece.
- Centerpiece: whole roasted cauliflower or a mushroom and chestnut wellington
- Sides: wild rice stuffing with cranberries and pecans, garlic mashed potatoes with olive oil, maple-roasted carrots, mushroom gravy
- Dessert: spiced pumpkin pie with coconut cream
It works for a whole table or alongside the classic menu, so everyone eats the same meal. More on my plant-based menus and allergy-friendly cooking.
4. Friendsgiving for a crowd
I’ve cooked Friendsgiving for groups of 25 in valley homes. For a big group, family-style platters beat plated courses: people pass dishes, go back for seconds, and nobody waits.
- Passed bites while guests arrive: bacon-wrapped Medjool dates, crostini, a cheese board
- Two proteins, such as roasted turkey and a slow-braised short rib
- Five or six sides on long platters down the table
- Two desserts, so there’s a pie person option and a chocolate person option
For groups of 10 to 40, see small-event catering.
How a private chef Thanksgiving works
- We talk through your table. Guest count, dietary needs, the family dishes you can’t skip.
- I write your menu. You approve it or tweak it.
- I shop and arrive with everything. Your oven, stove and fridge are all I need.
- I cook, serve and clean up. You stay with your guests.
- Leftovers get packed. Labeled containers for Friday’s sandwiches.
Book early
Thanksgiving is the busiest cooking day of the year, and I can only be in one kitchen. Dates fill weeks ahead, especially for larger groups. If you’re staying in a rental, see vacation rental private chef. If you’re here for the whole season, ask about weekly meal prep after the holiday.
